Helpful hint, when you have bananas that are going bad, use them (even if they are brownish/black) and put them in banana pancakes. It is something different then my normal banana bread and the children love pancakes for breakfast!
Here is the recipe I used today and it was an instant hit!
I mixed all the wet ingredients first and then added the dry ingredients in the bowl one at a time. For the banana, it was extremely mushy, so I didn’t need to chop anything up! For the butter, I melted it in the microwave and then added it to the wet ingredients.
I added cooking spray and then I spooned it into the pan. I waited until I could see the edges were completely done and there were bubbles in the top. I have the hardest time flipping pancakes. This is mostly because I like the big full plate size look of the pancakes. So with the banana these were extra difficult to flip. If I did this recipe again, I would just suffer and make all 4 inch sized pancakes.
